3. CEVICHE
Ceviche kommer opprinnelig fra Peru og Equador, men er svært utbredt i Mexico i dag. Fersk fisk eller skalldyr marineres rå i en blanding av limesaft, løk, chili og koriander, og fisken blir saftig og smakfull. Smaksløkene dine vil fryde seg! Ved siden av får du som regel servert sprø maischips. Tar du en iskald Corona ved siden av er måltidet komplett.

2. POLLO PIBIL
Yucatan-halvøyas nasjonalrett. I gamle dager ble kjøttet pakket i bananblader og plassert i bbq-pits. I dag bakes kjøttet stort sett i ovnen, men bananblader brukes fortsatt for saftighetens skyld.
Når du bestiller Pollo Pibil får du saftig kylling marinert i achiote-pasta – en blanding av krydder som oregano, spisskummen, kardemomme, pepper og hvitløk. Se for deg at du setter trekantformede nachos-chips sammen til de danner en sirkel (med spissen inn mot midten). Så lasser du på med ost, kjøtt og andre fristende godsaker. Så legger du et nytt lag med nachos, fyller på mer digg, legger på mer nachos – du skjønner tegninga – og så varmer du det og topper det hele med enda litt mer ost, salsa og skikkelig chunky guacamole.
